- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese, optional
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and let it rest.
- Add the remaining olive oil and sauté the minced garlic for about 1 minute until fragrant.
- Stir in the Italian seasoning, salt, and pepper.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- In a large bowl, combine the softened cream cheese, half of the mozzarella cheese, and the cooked spinach mixture.
- Shred the cooked chicken and fold it into the cheese and spinach mixture.
- Transfer everything to a baking dish and spread it evenly.
- Top with the remaining mozzarella and Parmesan cheese (if using).
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
Notes
Let the casserole sit for a few minutes after baking to set up a bit. Feel free to mix in other veggies like bell peppers or mushrooms for added flavor.
