  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup Parmesan cheese, optional

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook until golden brown on both sides, about 5 minutes per side.
  4. Remove the chicken from the skillet and let it rest.
  5. Add the remaining olive oil and sauté the minced garlic for about 1 minute until fragrant.
  6. Stir in the Italian seasoning, salt, and pepper.
  7. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  8. In a large bowl, combine the softened cream cheese, half of the mozzarella cheese, and the cooked spinach mixture.
  9. Shred the cooked chicken and fold it into the cheese and spinach mixture.
  10. Transfer everything to a baking dish and spread it evenly.
  11. Top with the remaining mozzarella and Parmesan cheese (if using).
  12. Bake for 20-25 minutes or until the cheese is bubbly and golden.
