- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup ricotta cheese
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1/2 cup chopped pistachios (optional)
- 1/2 teaspoon cinnamon
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Combine graham cracker crumbs and melted butter in a bowl, mixing until crumbly. Press the mixture firmly into the bottom of the prepared dish to form the crust.
- Beat the ricotta cheese, cream cheese, and powdered sugar in a mixing bowl until smooth.
- Stir in vanilla extract, chocolate chips, cinnamon, and heavy cream until evenly mixed.
- Spread the cream cheese mixture over the crust, smoothing it into an even layer. Sprinkle chopped pistachios on top, if using.
- Bake the bars in the preheated oven for about 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 2 hours before cutting into squares.
