- 1 small head of green cabbage, finely shredded
- 1 small head of red cabbage, finely shredded
- 2 large carrots, grated
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Finely shred both the green and red cabbage and place them in a large bowl.
- Grate the carrots and chop the red and green bell peppers, then mix them into the bowl with the cabbage.
- In a separate bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper. Whisk until smooth.
- Pour the dressing over the shredded vegetables and toss until everything is well coated.
- Sample your coleslaw, adding extra salt or pepper if needed.
- Let it sit in the refrigerator for at least 30 minutes before serving for the best flavor.
