  • 1 small head purple cabbage, finely shredded
  • 2 large carrots, peeled and grated
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: 1 tablespoon hot sauce or chili flakes for heat

Instructions

  1. Prepare the cabbages by finely shredding the green and purple cabbage in a large bowl.
  2. Grate the carrots and add them to the bowl along with the sliced red onion.
  3. In a separate mixing bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper. If you like a little heat, stir in the optional hot sauce or chili flakes.
  4. Pour the dressing over the cabbage mixture and toss well to ensure everything is evenly coated.
  5. Taste and adjust seasoning, adding more salt, pepper, or hot sauce if needed.
  6. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
