- 1 cup unsalted butter
- 1 cup Biscoff cookie butter
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup white chocolate chips
- 1/2 cup crushed Biscoff cookies
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Melt the butter in a medium saucepan over low heat. Once melted, remove from heat and let it cool slightly.
- Stir in the Biscoff cookie butter and brown sugar until combined.
- Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fold in the white chocolate chips and crushed Biscoff cookies.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan before cutting into squares.
Notes
Don’t overmix the batter; a few lumps are okay for that perfect chewy texture. Use high-quality butter for richer flavor. Cool completely before cutting to ensure neat squares.
