Ingredients

  • 1 large cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • 1 green bell pepper (diced)
  • ½ red onion (thinly sliced)
  • ½ cup Kalamata olives (halved)
  • 4 ounces feta cheese (crumbled)
  • ⅓ cup red apple vinegar
  • Juice of 1 lemon
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves (minced)
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup olive oil
  • Salt and pepper (to taste)

Instructions

  1. Dice the cucumber and place it in a large salad bowl.
  2. Halve the grape tomatoes and add them to the bowl.
  3. Dice the green bell pepper and add it to the mix.
  4. Thinly slice the red onion and toss it in with the other ingredients.
  5. Halve the Kalamata olives and mix them in.
  6. Crumble the feta cheese over the top of the salad.
  7. In a small bowl, whisk together the red apple vinegar, lemon juice, Dijon mustard, minced garlic, oregano, salt, and black pepper.
  8. Slowly drizzle in the olive oil while whisking to create a dressing.
  9. Pour the dressing over the salad and gently toss everything together.
  10. Taste and add salt and pepper as needed.

Notes

Use fresh ingredients for the best flavor. Letting the salad marinate enhances the taste. Consider adding protein for a complete meal.
