Baked Apple Pie Rice Paper Rolls

Delicious rice paper rolls filled with cinnamon-spiced apples, baked to a golden crisp for a fun twist on classic apple pie.

Ingredients

  • 4 Apples, peeled and diced
  • 1/3 Cup Brown Sugar
  • 1 Tsp Cinnamon
  • Part of a Package of Rice Paper
  • 2 Tbsp Cooking Oil of choice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the diced apples in a mixing bowl with brown sugar and cinnamon until well-coated.
  3. Soak rice paper sheets in warm water for about 10-15 seconds until soft.
  4. Lay a soft rice paper sheet on a clean, flat surface.
  5. Spoon a small amount of the apple mixture onto the lower third of the rice paper.
  6. Fold the sides of the rice paper in towards the center, then roll it up tightly from the bottom to the top.
  7. Place the rolled rice paper seam-side down on a baking sheet. Repeat until all the apple filling is used.
  8. Brush the rolls lightly with cooking oil.
  9. Bake for 15-20 minutes until golden and crispy.

Notes

Ensure the rice paper is soaked just long enough to be pliable but not too soft. Experiment with different apple varieties for varying sweetness and texture. Serve with a scoop of vanilla ice cream for an extra treat!
