Instructions

  1. Combine the mixed salad greens, shredded red cabbage, shredded carrots, sliced bell peppers, and sliced cucumbers in a large bowl.
  2. Add the fresh cilantro and roasted cashews to the bowl for an added crunch.
  3. Whisk together the lime juice, sesame oil, grated ginger, soy sauce, and honey or maple syrup in a small bowl to create the dressing.
  4. Pour the dressing over the salad mixture and toss gently to combine until all the ingredients are well-coated.
