- 1/2 cup applesauce
- 1/2 cup water
- 3 tbsp oil (or additional applesauce)
- 2 tsp pure vanilla extract
- 1 tbsp white vinegar
- 1 1/2 cups flour (white, spelt, or oat)
- 1/3 cup sugar
- 3/4 tsp salt
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp allspice (optional)
- 1/2 cup raisins, chopped walnuts, or shredded coconut (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- Mix together the applesauce, water, oil, vanilla extract, and white vinegar in a large bowl.
- Whisk together the flour, sugar, salt, baking soda, baking powder, cinnamon, and allspice (if using) in another bowl.
- Combine the wet and dry ingredients, mixing until just blended.
- Fold in any optional add-ins, like raisins or nuts, if desired.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow it to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
Don’t overmix for a light and fluffy cake. Adjust sweetness as desired. Use unsweetened applesauce to reduce added sugars.
