Applesauce Cake

Ingredients

  • 1/2 cup applesauce
  • 1/2 cup water
  • 3 tbsp oil (or additional applesauce)
  • 2 tsp pure vanilla extract
  • 1 tbsp white vinegar
  • 1 1/2 cups flour (white, spelt, or oat)
  • 1/3 cup sugar
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice (optional)
  • 1/2 cup raisins, chopped walnuts, or shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Mix together the applesauce, water, oil, vanilla extract, and white vinegar in a large bowl.
  3. Whisk together the flour, sugar, salt, baking soda, baking powder, cinnamon, and allspice (if using) in another bowl.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. Fold in any optional add-ins, like raisins or nuts, if desired.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow it to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

Don’t overmix for a light and fluffy cake. Adjust sweetness as desired. Use unsweetened applesauce to reduce added sugars.
