Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, mix the non-dairy milk, sugar, and apple cider vinegar until well blended.
  3. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  4. Gently fold in the diced apples until they are evenly distributed throughout the batter.
  5. In a heavy pan, heat oil over medium heat until hot enough for frying.
  6. Drop batter into the hot oil, forming fritters. Fry for about 3-4 minutes on each side or until golden brown.
  7. Remove the fritters from the oil and drain them on paper towels. Dust with powdered sugar if desired.
