- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour

- 1/4 teaspoon salt
- 1 cup chopped almonds
- 1 cup dried cherries
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the butter mixture until just combined.
- Gently fold in the chopped almonds and dried cherries until evenly distributed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set.
- Cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
Chill the dough if too sticky and consider toasting the almonds for added flavor. Experiment with different dried fruits for variety.
