- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado, mashed
- ½ cup of Frozen or Canned Corn, thawed if frozen or drained if canned
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice, freshly squeezed
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper, to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- Rinse and drain the canned black beans, ensuring to remove any excess sodium and starch.
- Mash the ripe avocado in a mixing bowl until creamy.
- Add the rinsed black beans, corn, chopped red onion, chopped cilantro, lime juice, cumin, and chili powder to the bowl.
- Mix everything until combined. Season with salt and black pepper to taste.
- Spoon the burrito filling onto the center of each flour tortilla.
- Roll the tortillas tightly, folding in the sides as you go, then slice them in half for easy eating.
Notes
Choose ripe avocados for the creamiest texture. Adjust seasoning to your taste and consider adding more lime or spices.
